How to make Irish stew

  1. Cut 1 kg of lamb shoulder into uniform chunks and season generously with 1 tsp salt and 0.5 tsp black pepper.
  2. In a large pot, heat a splash of oil over medium heat until shimmering.
  3. Add the seasoned lamb chunks to the pot and brown them in batches, about 5 minutes each batch.
  4. Remove the browned lamb and set aside, then add 1 chopped onion to the pot.
  5. Sauté the chopped onion for 3 to 4 minutes, scraping up any browned bits from the bottom.
  6. Stir in 2 minced garlic cloves and cook for an additional minute until fragrant.
  7. Add 3 chopped carrots and 500 g of chopped potatoes to the pot with the onions.
  8. Pour in 1.5 L of beef stock, stirring to combine all ingredients well.
  9. Add 2 tsp dried thyme and 2 bay leaves, bringing the mixture to a boil.
  10. Reduce the heat and return the browned lamb to the pot, then cover and simmer for 1.5 hours.
  11. After simmering, taste and adjust seasoning with salt and black pepper if needed.
  12. Serve the Irish stew hot, garnished with chopped fresh parsley if desired.
