How to make Sabich

  1. Preheat your oven to 200°C (400°F) to prepare for roasting.
  2. Slice the eggplant into 1 cm rounds, then brush each round with 2 tablespoons of olive oil.
  3. Season the eggplant slices with 1 teaspoon of salt and 1/2 teaspoon of pepper, ensuring even coverage.
  4. Place the eggplant slices on a baking tray and roast in the oven for 20 minutes until golden and tender.
  5. While the eggplant is roasting, cut the pita bread in half to prepare for filling.
  6. Warm the pita halves in the oven for about 5 minutes until they are soft and pliable.
  7. Once roasted, remove the eggplant from the oven and let it cool slightly.
  8. Assemble each pita by spreading 2 tablespoons of hummus on the inside, then layer in the roasted eggplant, hard-boiled eggs, pickles, and diced tomatoes.
  9. Sprinkle chopped parsley over the assembled pita and serve immediately while warm.
