Lamb soup recipe
Warm up with this hearty Icelandic lamb soup!
Ingredients
- 800 g lamb shoulder
- 200 g carrots
- 300 g potatoes
- 150 g onion
- 100 g celery
- 2000 ml water
- 1 tbsp salt
- 1 tsp black pepper
- 1 tsp thyme
How to make Lamb soup
- Prepare the ingredients by cutting the lamb into 5 cm chunks and measure 1 teaspoon of salt.
- In a large pot, heat over medium-high and brown the lamb for 6-8 minutes until nicely browned.
- Chop 1 onion, 2 carrots, 2 celery stalks, and 2 potatoes, then add to the pot with the lamb.
- Pour in 2 liters of water and bring the mixture to a rolling boil.
- Once boiling, reduce the heat to low and let the soup simmer for 1.5 hours.
- Add 1 teaspoon of thyme and 1 teaspoon of black pepper to the pot.
- Continue cooking until the lamb is tender and flavors meld together.
- Serve the hot soup in bowls, garnished with fresh herbs if desired.
