How to make Ackee and saltfish

  1. Soak 250 g of saltfish overnight in water to rehydrate.
  2. Boil the soaked saltfish in water for 15-20 minutes until tender.
  3. Flake the cooked saltfish into bite-sized pieces and set aside in a bowl.
  4. Chop 1 onion, 2 cloves of garlic, and 1 bell pepper into small pieces before cooking.
  5. Heat 2 tablespoons of oil in a pan over medium heat.
  6. Sauté the chopped onion in the hot oil for about 3 minutes until translucent.
  7. Add the minced garlic and chopped bell pepper, cooking for an additional 2 minutes.
  8. Stir in 1 chopped tomato and 1 teaspoon of thyme. Cook for 5 minutes until soft.
  9. Gently fold in 400 g of ackee and the flaked saltfish along with 1/2 teaspoon of black pepper.
  10. Cook the mixture gently for 5 minutes, stirring carefully to not mash the ackee.
  11. Serve the ackee and saltfish warm on a plate, garnished with fresh thyme if desired.
