Jerk chicken recipe
Spicy, smoky, and irresistibly flavorful jerk chicken!
Ingredients
- 800 g chicken thighs
- 4 unit scallions
- 4 unit garlic
- 20 g ginger
- 2 tbsp thyme
- 1 tbsp allspice
- 2 tbsp brown sugar
- 60 ml soy sauce
- 60 ml lime juice
- 1 unit scotch bonnet pepper
- 2 tbsp olive oil
- 1 tsp salt
- 1 tsp black pepper
How to make Jerk chicken
- Chop 4 scallions, 3 cloves of garlic, and a thumb-sized piece of ginger finely before blending.
- In a blender, combine the chopped scallions, garlic, ginger, and 1 tablespoon of thyme.
- Add 2 teaspoons of allspice, 2 tablespoons of brown sugar, 1/4 cup of soy sauce, the juice of 1 lime.
- Include 1 chopped scotch bonnet pepper, 2 tablespoons of olive oil, 1 teaspoon of salt, and 1/2 teaspoon of black pepper.
- Blend all ingredients until smooth to create a marinade for the chicken.
- Place 6 chicken thighs in a bowl and pour the marinade over them, ensuring they are well coated.
- Cover the bowl and refrigerate the marinated chicken for at least 2 hours, preferably overnight.
- Preheat the grill to medium-high heat, around 200°C (400°F) before cooking the chicken.
- Grill each marinated chicken thigh for 6-8 minutes on each side until their internal temperature reaches 75°C (165°F).
- When cooked, remove the chicken from the grill and let it rest for 5 minutes on a plate.
- Serve the jerk chicken hot with a side of rice and peas or a fresh salad.
