How to make Jerk chicken

  1. Chop 4 scallions, 3 cloves of garlic, and a thumb-sized piece of ginger finely before blending.
  2. In a blender, combine the chopped scallions, garlic, ginger, and 1 tablespoon of thyme.
  3. Add 2 teaspoons of allspice, 2 tablespoons of brown sugar, 1/4 cup of soy sauce, the juice of 1 lime.
  4. Include 1 chopped scotch bonnet pepper, 2 tablespoons of olive oil, 1 teaspoon of salt, and 1/2 teaspoon of black pepper.
  5. Blend all ingredients until smooth to create a marinade for the chicken.
  6. Place 6 chicken thighs in a bowl and pour the marinade over them, ensuring they are well coated.
  7. Cover the bowl and refrigerate the marinated chicken for at least 2 hours, preferably overnight.
  8. Preheat the grill to medium-high heat, around 200°C (400°F) before cooking the chicken.
  9. Grill each marinated chicken thigh for 6-8 minutes on each side until their internal temperature reaches 75°C (165°F).
  10. When cooked, remove the chicken from the grill and let it rest for 5 minutes on a plate.
  11. Serve the jerk chicken hot with a side of rice and peas or a fresh salad.
