Ingredients
- 300 g rice
- 400 ml coconut milk
- 1 unit onion
- 3 unit garlic
- 1 unit green bell pepper
- 500 g chicken thighs
- 2 tbsp curry powder
- 1 tsp salt
- 1 tsp pepper
- 2 tbsp oil
How to make Mkatra foutra
- Measure 250 g of rice, and rinse it under cold water before cooking.
- Cook the rice according to the package instructions, then set it aside once done.
- Heat 2 tbsp of oil in a pan over medium heat until shimmering but not smoking.
- Sauté 1 chopped onion in the hot oil until it turns golden brown, about 5 minutes.
- Add 2 minced garlic cloves and continue to sauté for another minute until fragrant.
- Add 500 g diced chicken thighs to the pan and cook until browned, about 7-10 minutes.
- Stir in 1 tbsp of curry powder, 1 tsp of salt, and 1/2 tsp of pepper, mixing thoroughly.
- Pour in 400 ml of coconut milk and add 1 diced green bell pepper to the mixture.
- Simmer for 20 minutes until the chicken is cooked through and tender, stirring occasionally.
- Once cooked, fluff the rice with a fork and serve the chicken mixture over the rice.
