  1. Measure 250 g of rice, and rinse it under cold water before cooking.
  2. Cook the rice according to the package instructions, then set it aside once done.
  3. Heat 2 tbsp of oil in a pan over medium heat until shimmering but not smoking.
  4. Sauté 1 chopped onion in the hot oil until it turns golden brown, about 5 minutes.
  5. Add 2 minced garlic cloves and continue to sauté for another minute until fragrant.
  6. Add 500 g diced chicken thighs to the pan and cook until browned, about 7-10 minutes.
  7. Stir in 1 tbsp of curry powder, 1 tsp of salt, and 1/2 tsp of pepper, mixing thoroughly.
  8. Pour in 400 ml of coconut milk and add 1 diced green bell pepper to the mixture.
  9. Simmer for 20 minutes until the chicken is cooked through and tender, stirring occasionally.
  10. Once cooked, fluff the rice with a fork and serve the chicken mixture over the rice.
