How to make Harees

  1. Soak 250 g of wheat in water overnight to soften completely.
  2. In a large pot, combine the soaked wheat, 500 g of chicken, and 4 cups of water.
  3. Bring the mixture to a boil over high heat for about 5 minutes.
  4. Reduce the heat to low, cover the pot, and simmer for 2 hours.
  5. Remove the chicken from the pot; shred the meat with forks or by hand.
  6. Return the shredded chicken to the pot with the wheat mixture.
  7. Stir in 1 teaspoon of salt, 1 teaspoon of black pepper, 3 tablespoons of ghee, 1 teaspoon of cinnamon, and 1 teaspoon of cardamom.
  8. Simmer for an additional 30 minutes, stirring occasionally to prevent sticking.
  9. Once done, remove from heat and let it rest for 5 minutes before serving hot.
