Harees recipe
Savor the rich flavors of traditional Kuwaiti harees.
Ingredients
- 200 g wheat
- 500 g chicken
- 1500 ml water
- 1 tbsp salt
- 1 tsp black pepper
- 50 g ghee
- 1 tsp cinnamon
- 1 tsp cardamom
How to make Harees
- Soak 250 g of wheat in water overnight to soften completely.
- In a large pot, combine the soaked wheat, 500 g of chicken, and 4 cups of water.
- Bring the mixture to a boil over high heat for about 5 minutes.
- Reduce the heat to low, cover the pot, and simmer for 2 hours.
- Remove the chicken from the pot; shred the meat with forks or by hand.
- Return the shredded chicken to the pot with the wheat mixture.
- Stir in 1 teaspoon of salt, 1 teaspoon of black pepper, 3 tablespoons of ghee, 1 teaspoon of cinnamon, and 1 teaspoon of cardamom.
- Simmer for an additional 30 minutes, stirring occasionally to prevent sticking.
- Once done, remove from heat and let it rest for 5 minutes before serving hot.
