How to make Khao piak sen

  1. In a bowl, combine 500 g of rice flour and 200 ml of water to form a smooth dough until well mixed.
  2. Roll the dough into thin noodles on a floured surface and cut into strips about 5 mm wide.
  3. In a pot, bring 1 liter of chicken broth to a boil over high heat.
  4. Add 300 g of chicken breast to the boiling broth and reduce the heat to medium. Simmer until the chicken is fully cooked, about 15 minutes.
  5. Remove the chicken from the broth and let it cool slightly. Shred it using two forks, and set aside.
  6. Return the shredded chicken to the pot along with 4 crushed garlic cloves.
  7. Add the noodles to the broth and cook for 5-7 minutes over medium heat until tender, stirring occasionally to prevent sticking.
  8. Serve hot in bowls and garnish with lime wedges, chopped green onions, cilantro, and a splash of fish sauce.
