Khao piak sen recipe

Ingredients
- 250 g rice flour
- 500 ml water
- 400 g chicken breast
- 1 unit chicken broth
- 3 unit garlic
- 2 unit lime
- 4 unit green onions
- 1 unit cilantro
- 3 tbsp fish sauce
- 1 tsp pepper
How to make Khao piak sen
- In a bowl, combine 500 g of rice flour and 200 ml of water to form a smooth dough until well mixed.
- Roll the dough into thin noodles on a floured surface and cut into strips about 5 mm wide.
- In a pot, bring 1 liter of chicken broth to a boil over high heat.
- Add 300 g of chicken breast to the boiling broth and reduce the heat to medium. Simmer until the chicken is fully cooked, about 15 minutes.
- Remove the chicken from the broth and let it cool slightly. Shred it using two forks, and set aside.
- Return the shredded chicken to the pot along with 4 crushed garlic cloves.
- Add the noodles to the broth and cook for 5-7 minutes over medium heat until tender, stirring occasionally to prevent sticking.
- Serve hot in bowls and garnish with lime wedges, chopped green onions, cilantro, and a splash of fish sauce.
