Kottu roti recipe
A delicious Sri Lankan street food delight!
Ingredients
- 4 unit roti
- 200 g cabbage
- 100 g carrot
- 1 unit onion
- 2 unit egg
- 300 g chicken
- 2 tbsp soy sauce
- 1 tbsp curry powder
- 1 tsp salt
- 2 tbsp oil
How to make Kottu roti
- Heat 2 tablespoons of oil in a large pan over medium heat until it shimmers and is ready for cooking.
- Add 1 chopped onion to the pan and sauté until it turns translucent, about 3-4 minutes.
- Stir in 200 g of shredded cabbage, 100 g of grated carrot, and 250 g of diced chicken; cook until the chicken is no longer pink, about 7-10 minutes.
- Add 1 tablespoon of curry powder, 3 tablespoons of soy sauce, and a pinch of salt; mix well for 2-3 minutes to combine all flavors.
- Incorporate 300 g of roti pieces and 2 beaten eggs; stir-fry everything together until heated through and well combined, about 3-4 minutes.
- Once cooked, taste for seasoning and adjust if necessary, stirring well to combine.
- Remove from heat and let it sit for a minute to set slightly before serving.
- Serve hot with a side of lime wedges for added freshness.
