How to make Bouneschlupp

  1. Chop 500 g of potatoes, 2 carrots, and 2 leeks into small, even pieces. Prepare all vegetables before starting the dish.
  2. In a large pot over medium heat, cook 200 g of smoked bacon until crispy, approximately 5 minutes, then remove and set aside on paper towels.
  3. Add the chopped potatoes, carrots, and leeks to the pot, sautéing for 5 minutes until they begin to soften and release their fragrance.
  4. Pour in 1.5 liters of vegetable broth and bring the mixture to a boil over high heat, watching for bubbles to rise.
  5. Once boiling, reduce the heat to low. Cover the pot and let it simmer for 30 minutes, or until all vegetables are tender.
  6. Stir the crispy bacon back into the soup, mixing well to combine flavors throughout.
  7. Season the soup with 1 teaspoon of salt and ½ teaspoon of black pepper, adjusting to taste as necessary.
  8. Garnish with freshly chopped parsley before serving, adding a fresh touch to the soup. Serve hot.
