Couscous recipe
Enjoy a fragrant and fluffy Libyan couscous dish!
Ingredients
- 300 g couscous
- 400 ml water
- 3 tbsp olive oil
- 2 unit carrot
- 2 unit zucchini
- 200 g chickpeas
- 1 tsp cumin
- 1 tsp salt
- 1 tsp pepper
How to make Couscous
- Measure 500 ml of water and bring it to a boil in a pot, then stir in 1 tsp salt.
- Add 300 g couscous to the boiling water, cover the pot, and let it steam for 10 minutes.
- While the couscous steams, chop 1 carrot and 1 zucchini into small pieces.
- In a frying pan, heat 2 tbsp olive oil over medium heat until shimmering.
- Add the chopped carrot and zucchini to the pan and sauté until they are tender, about 5 minutes.
- Stir in 200 g canned chickpeas and 1 tsp cumin to the pan, mixing well.
- Continue to cook for an additional 5 minutes over medium heat, stirring occasionally.
- Fluff the cooked couscous with a fork and gently mix in the sautéed vegetables before serving warm.
