How to make Barbajuan

  1. Preheat your oven to 200°C (400°F).
  2. In a skillet, add 1 tablespoon of olive oil and heat over medium heat.
  3. Sauté 300 g of spinach until wilted, about 4-5 minutes, then remove from heat to cool.
  4. In a mixing bowl, combine 250 g of ricotta cheese and 100 g of grated parmesan cheese.
  5. Add the cooled sautéed spinach to the bowl and mix well.
  6. Season the mixture with salt and black pepper to taste and combine thoroughly.
  7. On a floured surface, roll out 500 g of puff pastry to about 3 mm thick.
  8. Cut the pastry into squares, each measuring 10 cm on each side.
  9. Place about 1 tablespoon of the filling in the center of each square, folding over to seal the edges tightly.
  10. Brush the tops of the pastries with 1 beaten egg using a pastry brush.
  11. Arrange them on a baking tray lined with parchment paper and bake for 25 minutes until golden brown.
  12. Remove from the oven and let cool for a couple of minutes before serving.
