Stocafi recipe
A savory fish stew that warms the soul!
Ingredients
- 600 g cod fillet
- 60 ml olive oil
- 1 unit onion
- 3 unit garlic
- 400 g tomatoes
- 100 g black olives
- 2 tbsp capers
- 150 ml white wine
- 1 unit parsley
- 1 tsp salt
- 1 tsp pepper
How to make Stocafi
- In a large pot, heat 4 tablespoons of olive oil over medium heat until shimmering, about 2 minutes.
- Add 1 diced onion to the pot and sauté until soft and translucent, about 5 minutes.
- Stir in 2 minced garlic cloves and sauté for an additional 1 minute, until fragrant.
- Add 400 g of chopped tomatoes to the pot and cook until they break down, about 10 minutes.
- Pour in 150 ml of white wine and bring the mixture to a gentle simmer.
- Add 400 g of cod fillet to the pot, followed by 100 g of black olives and 2 tablespoons of capers.
- Let the stew simmer for 20 minutes, allowing the flavors to meld together.
- Season the mixture with salt and pepper to taste before removing from heat.
- Garnish with chopped parsley for fresh flavor and color.
- Ladle the stew into bowls for serving, ensuring fish and olives are distributed.
- Serve hot, paired with crusty bread or over rice for a complete meal.
