Ingredients
- 2000 g pork leg
- 100 g sea salt
- 10 g black pepper
- 4 unit garlic
- 4 unit bay leaves
- 10 g smoked paprika
- 50 ml olive oil
How to make Njeguški pršut
- Trim any excess fat from a pork leg and thoroughly rinse it under cold water.
- Rub the pork leg with 4 tablespoons of sea salt, 1 tablespoon of black pepper, 4 minced garlic cloves, and 2 teaspoons of smoked paprika.
- Place 3 bay leaves on top of the meat for additional flavor and aroma.
- Wrap the seasoned pork tightly in cheesecloth to secure the ingredients.
- Suspend the wrapped meat in a cool, dry place for at least 2 months to allow it to cure properly.
- After curing, carefully unwrap the Njeguški pršut and slice it thinly for serving.
- Serve the slices on a platter with olives and crusty bread for a delicious pairing.
