Breadfruit pudding recipe

Ingredients
- 500 g breadfruit
- 400 ml coconut milk
- 100 g sugar
- 2 tsp vanilla extract
- 1 pinch salt
- 2 unit eggs
How to make Breadfruit pudding
- Peel the breadfruit and chop it into 2 cm pieces, discarding any blemishes.
- Place the chopped breadfruit in a pot, cover with water, and boil for 15 minutes until tender.
- Drain the cooked breadfruit in a colander and set aside to cool slightly.
- In a large bowl, mash the drained breadfruit until smooth and lump-free.
- Add 400 ml of coconut milk, 100 g of sugar, 1 teaspoon of vanilla extract, and a pinch of salt to the mashed breadfruit.
- In a separate bowl, beat 2 eggs until frothy, then fold them into the breadfruit mixture until combined.
- Grease a baking dish, pour in the mixture, and smooth the top for even baking.
- Preheat the oven to 180°C and bake the pudding for 30 minutes until golden brown on top.
- Remove the pudding from the oven and let it cool for 10 minutes before slicing and serving. Alternatively, serve chilled.
