Ajvar recipe
A smoky and flavorful roasted pepper spread!
Ingredients
- 4 unit red bell peppers
- 1 unit eggplant
- 4 unit garlic
- 60 ml olive oil
- 30 ml vinegar
- 1 tsp salt
- 1 tsp black pepper
How to make Ajvar
- Preheat the oven to 220°C (425°F).
- Wash 4 red bell peppers and 1 eggplant thoroughly and place them on a baking sheet.
- Roast the vegetables for 30-40 minutes, turning halfway until charred and blackened.
- Remove from the oven and cover the vegetables with foil for 15 minutes to steam.
- Once cooled, carefully peel the skin off the red peppers and eggplant.
- Finely chop the peeled roasted vegetables and set them aside.
- In a mixing bowl, combine the chopped vegetables, 2 minced garlic cloves, 3 tablespoons of olive oil, 1 tablespoon of vinegar, 1 teaspoon of salt, and ¼ teaspoon of black pepper.
- Mix well until all ingredients are combined, then adjust seasoning if necessary.
- Serve the ajvar warm or cold as a flavorful dip or spread on bread.
