How to make Ajvar

  1. Preheat the oven to 220°C (425°F).
  2. Wash 4 red bell peppers and 1 eggplant thoroughly and place them on a baking sheet.
  3. Roast the vegetables for 30-40 minutes, turning halfway until charred and blackened.
  4. Remove from the oven and cover the vegetables with foil for 15 minutes to steam.
  5. Once cooled, carefully peel the skin off the red peppers and eggplant.
  6. Finely chop the peeled roasted vegetables and set them aside.
  7. In a mixing bowl, combine the chopped vegetables, 2 minced garlic cloves, 3 tablespoons of olive oil, 1 tablespoon of vinegar, 1 teaspoon of salt, and ¼ teaspoon of black pepper.
  8. Mix well until all ingredients are combined, then adjust seasoning if necessary.
  9. Serve the ajvar warm or cold as a flavorful dip or spread on bread.
