How to make Fakoye

  1. Chop 1 onion, 2 tomatoes, 1 carrot, and 1 sweet potato before starting the cooking process.
  2. In a large pot, heat 3 tablespoons of oil over medium heat until shimmering, approximately 2-3 minutes.
  3. Sauté the chopped onion for about 5 minutes, until it turns translucent and aromatic.
  4. Add 500 grams of chicken pieces to the pot and brown them on all sides for around 7-8 minutes.
  5. Stir in the chopped tomatoes and 2 tablespoons of peanut butter, mixing well for 1-2 minutes.
  6. Pour in 400 milliliters of water, stirring to combine all ingredients together.
  7. Add the diced carrot and diced sweet potato, along with 1 teaspoon of salt and 1/2 teaspoon of black pepper.
  8. Simmer the mixture for 45 minutes, until the chicken is cooked through and vegetables are tender.
  9. Remove from heat and let it rest for 5 minutes before serving.
  10. Plate the dish, ensuring chicken and vegetables are evenly distributed, and serve warm.
