Mechouia recipe
A smoky and spicy North African salad delight.
Ingredients
- 400 g bell peppers
- 300 g tomatoes
- 1 unit onion
- 4 unit garlic
- 60 ml olive oil
- 1 tsp cumin
- 1 tsp salt
- 1 tsp black pepper
- 2 tbsp lemon juice
How to make Mechouia
- Preheat the oven to 200°C (400°F) for roasting the vegetables.
- Place 400 g of bell peppers and 300 g of tomatoes on a baking sheet.
- Roast the vegetables for 25-30 minutes until the skin is charred and blistered.
- Once the vegetables are cool enough to handle, peel the charred bell peppers and tomatoes.
- Chop the peeled vegetables, along with 100 g of onion and 2 cloves of garlic, into small pieces.
- In a mixing bowl, combine the chopped vegetables with 50 ml of olive oil and season with 1 tsp of cumin, 1 tsp of salt, and ½ tsp of black pepper.
- Stir well until all ingredients are uniformly mixed together.
- Drizzle 40 ml of lemon juice over the mixture and toss well to combine everything evenly.
- Transfer the salad to a serving dish and spread it out for presentation.
- Serve chilled or at room temperature to enhance the flavor of the mechouia.
