How to make Pastizzi

  1. Chop 1 tsp of salt, and measure 200 g of butter, 150 ml of water, and 300 g of ricotta cheese before starting.
  2. In a mixing bowl, combine 500 g of all-purpose flour and 1 tsp of salt. Cut in 200 g of diced butter until the mixture resembles coarse crumbs.
  3. Gradually pour in 150 ml of cold water, mixing until the dough begins to form. Wrap this in plastic and chill in the refrigerator for 30 minutes.
  4. In a separate bowl, mix 300 g of ricotta cheese, 1 beaten egg, 2 tbsp of chopped parsley, ½ tsp of salt, and ¼ tsp of pepper until smooth and well combined.
  5. On a floured surface, roll out the chilled dough to about 3 mm thick, then cut into 10-12 cm circles.
  6. Place a spoonful of the ricotta mixture in the center of each circle, ensuring not to overfill.
  7. Fold each dough circle in half to enclose the filling, pressing the edges firmly together to seal.
  8. Brush the tops with the remaining beaten egg for a nice glaze before baking.
  9. Preheat the oven to 200°C, ensuring even heat distribution during baking.
  10. Bake the pastries for 25-30 minutes, or until they turn golden brown on top and crisp to the touch.
  11. Remove from the oven and allow to cool slightly before serving. Enjoy your delicious Pastizzi warm.
