How to make Biryani

  1. In a bowl, marinate 500 g of chicken with 200 g of yogurt, 4 minced garlic cloves, 1-inch piece of grated ginger, and 3 tbsp of biryani spice mix. Let it sit for at least 30 minutes.
  2. Chop 2 onions and slice 2 tomatoes for use later.
  3. In a large pot, heat 3 tbsp of oil over medium heat. Add the sliced onions and sauté until they turn golden brown, about 5-7 minutes.
  4. Stir in the marinated chicken and cook for 7-10 minutes until browned, stirring occasionally.
  5. Add the chopped tomatoes to the pot and simmer for another 5 minutes, letting the flavors combine.
  6. In a separate pot, bring 6 cups of water to a boil over high heat. Carefully add 500 g of soaked basmati rice and cook for 5-6 minutes until slightly softened but still firm.
  7. Layer the partially cooked rice over the chicken mixture in the large pot. Cover and reduce the heat to low. Cook for 30 minutes to allow the flavors to meld together.
  8. After cooking, garnish the biryani with a handful of chopped coriander before serving with your choice of sides.
