How to make Rougaille

  1. Chop 1 onion, 2 tomatoes, 2 garlic cloves, and 1-inch piece of ginger. Set aside for use later.
  2. In a pan, heat 2 tbsp of olive oil over medium heat until shimmering, ensuring the oil coats the bottom well.
  3. Add the chopped onion, minced garlic, and grated ginger to the pan. Sauté for about 5 minutes until the onions are golden brown and fragrant.
  4. Incorporate 500 g of diced chicken to the pan and cook for 7-10 minutes until the chicken is browned on all sides, stirring occasionally.
  5. Add the chopped tomatoes and 1 chopped green chili into the pan. Stir in 1/2 tsp of salt and 1/2 tsp of black pepper to taste.
  6. Let the mixture simmer on low heat for 20 minutes, ensuring the chicken cooks through and absorbs the flavors.
  7. Once the chicken is fully cooked and tender, remove from heat and garnish the dish with a handful of chopped fresh coriander.
  8. Serve hot with rice or bread, allowing guests to enjoy the flavorful blend.
