Rougaille recipe
A flavorful Mauritian dish bursting with spices!
Ingredients
- 200 g onion
- 400 g tomatoes
- 4 unit garlic
- 20 g ginger
- 2 unit green chili
- 10 g coriander
- 30 ml olive oil
- 1 tsp salt
- 1 tsp black pepper
- 500 g chicken
How to make Rougaille
- Chop 1 onion, 2 tomatoes, 2 garlic cloves, and 1-inch piece of ginger. Set aside for use later.
- In a pan, heat 2 tbsp of olive oil over medium heat until shimmering, ensuring the oil coats the bottom well.
- Add the chopped onion, minced garlic, and grated ginger to the pan. Sauté for about 5 minutes until the onions are golden brown and fragrant.
- Incorporate 500 g of diced chicken to the pan and cook for 7-10 minutes until the chicken is browned on all sides, stirring occasionally.
- Add the chopped tomatoes and 1 chopped green chili into the pan. Stir in 1/2 tsp of salt and 1/2 tsp of black pepper to taste.
- Let the mixture simmer on low heat for 20 minutes, ensuring the chicken cooks through and absorbs the flavors.
- Once the chicken is fully cooked and tender, remove from heat and garnish the dish with a handful of chopped fresh coriander.
- Serve hot with rice or bread, allowing guests to enjoy the flavorful blend.
