How to make Katapa

  1. In a pot, bring 500 ml of water to a boil, then add 1 teaspoon of salt, stirring to dissolve.
  2. Gradually stir in 200 g of maize flour, mixing continuously to form a thick porridge without lumps.
  3. In a separate pan, heat 2 tablespoons of vegetable oil over medium heat until shimmering and ready for sautéing.
  4. Sauté 1 chopped onion, 1 chopped tomato, and 1 diced green bell pepper until softened, about 5-7 minutes.
  5. Add 300 g of chicken pieces to the sautéed vegetables and cook for 8-10 minutes, stirring occasionally, until browned on all sides.
  6. Combine the chicken mixture with the maize porridge, stirring well until evenly combined.
  7. Simmer the combined dish for 15 minutes over low heat, stirring occasionally to prevent sticking.
  8. Serve hot, garnished with additional vegetables if desired, on a plate.
