How to make Laksa

  1. Cook 200 g of rice noodles according to package instructions until tender, about 5-7 minutes.
  2. In a pot, heat 3 tablespoons of laksa paste over medium heat for 2 minutes until fragrant.
  3. Add 300 g of diced chicken breast to the pot and cook until no longer pink, about 5 minutes.
  4. Pour in 400 ml of coconut milk and bring the mixture to a gentle simmer.
  5. Simmer the soup for 10 minutes to blend the flavors and thicken slightly.
  6. Add 2 tablespoons of fish sauce and 100 g of bean sprouts to the pot and stir well.
  7. Remove from heat and let the soup rest for a couple minutes before serving.
  8. Serve the cooked noodles in bowls, ladle the soup over the top, and garnish with lime wedges and fresh coriander.
