How to make Nasi lemak

  1. Rinse 200 g of jasmine rice under cold water until the water runs clear.
  2. In a pot, combine the rinsed rice, 400 ml of coconut milk, 200 ml of water, and 1 teaspoon of salt.
  3. Cook on low heat for 20 minutes, covered, until the rice is fluffy and the liquid has been absorbed.
  4. While the rice cooks, slice 1 cucumber into thin rounds for garnish.
  5. Boil 2 eggs in a separate pot for about 7-10 minutes until hard-boiled.
  6. Once the rice is done, remove it from heat and let it rest for 5 minutes before fluffing it with a fork.
  7. Serve the fluffy rice on a plate with sliced cucumber, halved boiled eggs, 50 g of fried anchovies, 50 g of peanuts, and a generous spoonful of sambal.
