Nasi lemak recipe
Delicious coconut rice served with savory sides.
Ingredients
- 400 g jasmine rice
- 400 ml coconut milk
- 200 ml water
- 1 tsp salt
- 1 unit cucumber
- 4 unit boiled eggs
- 100 g fried anchovies
- 100 g peanuts
- 200 g sambal
How to make Nasi lemak
- Rinse 200 g of jasmine rice under cold water until the water runs clear.
- In a pot, combine the rinsed rice, 400 ml of coconut milk, 200 ml of water, and 1 teaspoon of salt.
- Cook on low heat for 20 minutes, covered, until the rice is fluffy and the liquid has been absorbed.
- While the rice cooks, slice 1 cucumber into thin rounds for garnish.
- Boil 2 eggs in a separate pot for about 7-10 minutes until hard-boiled.
- Once the rice is done, remove it from heat and let it rest for 5 minutes before fluffing it with a fork.
- Serve the fluffy rice on a plate with sliced cucumber, halved boiled eggs, 50 g of fried anchovies, 50 g of peanuts, and a generous spoonful of sambal.
