Egusi soup recipe
A rich and hearty Nigerian soup bursting with flavor!
Ingredients
- 200 g egusi (melon seeds)
- 100 ml palm oil
- 300 g beef
- 2 unit stock cube
- 200 g spinach
- 1 unit onion
- 1 tsp salt
- 500 ml water
How to make Egusi soup
- Measure 200 g of egusi seeds and 100 ml of water for blending.
- Blend the egusi seeds and water together into a smooth paste.
- Chop 1 onion into small pieces for sautéing.
- In a pot, heat 4 tablespoons of palm oil over medium heat.
- Sauté the chopped onion until it turns translucent, about 3-5 minutes.
- Add 500 g of beef to the pot and cook until browned, about 5 minutes.
- Pour in 1 liter of water and add 1 stock cube; stir to combine.
- Simmer the mixture for about 30 minutes until the beef is tender.
- Stir in the egusi paste and cook for an additional 15 minutes.
- Add 200 g of spinach and season with salt, cooking for another 5 minutes.
- Remove from heat and let the soup rest for a few minutes.
- Serve hot in bowls.
