How to make Egusi soup

  1. Measure 200 g of egusi seeds and 100 ml of water for blending.
  2. Blend the egusi seeds and water together into a smooth paste.
  3. Chop 1 onion into small pieces for sautéing.
  4. In a pot, heat 4 tablespoons of palm oil over medium heat.
  5. Sauté the chopped onion until it turns translucent, about 3-5 minutes.
  6. Add 500 g of beef to the pot and cook until browned, about 5 minutes.
  7. Pour in 1 liter of water and add 1 stock cube; stir to combine.
  8. Simmer the mixture for about 30 minutes until the beef is tender.
  9. Stir in the egusi paste and cook for an additional 15 minutes.
  10. Add 200 g of spinach and season with salt, cooking for another 5 minutes.
  11. Remove from heat and let the soup rest for a few minutes.
  12. Serve hot in bowls.
