How to make Bitterballen

  1. Melt 50 g of butter in a medium saucepan over medium heat until fully liquid.
  2. Finely chop 1 onion and sauté in the melted butter for about 5 minutes until it turns translucent.
  3. Add 300 g of ground beef to the saucepan, cooking for about 8 minutes until browned and crumbly, stirring often.
  4. Stir in 60 g of flour, mixing thoroughly until no dry flour remains in the pan.
  5. Gradually pour in 500 ml of beef broth while stirring constantly for about 5 minutes, until the mixture thickens.
  6. Season the mixture with a pinch of nutmeg, 1 teaspoon of salt, and 1 teaspoon of black pepper, mixing well.
  7. Remove from heat and allow the mixture to cool for at least 30 minutes before shaping.
  8. Shape the cooled mixture into small balls, roughly the size of golf balls, ensuring they hold together.
  9. Beat 1 egg in a bowl. Roll each ball in the egg, then coat in 100 g of breadcrumbs until evenly covered.
  10. Heat oil in a deep pan over medium-high heat until shimmering but not smoking.
  11. Fry the balls in hot oil for about 4-5 minutes until they turn golden brown and crispy.
  12. Remove the balls from the oil and drain them on paper towels before serving.
