How to make Pavlova

  1. Preheat your oven to 120°C (250°F) to prepare for baking the Pavlova.
  2. Line a baking tray with parchment paper to prevent sticking while baking.
  3. In a clean mixing bowl, whisk 4 egg whites until soft peaks form, about 2-3 minutes at medium speed.
  4. Gradually add 200 g of caster sugar, continuing to whisk until the mixture is glossy and stiff peaks form.
  5. Sprinkle in 1 tablespoon of cornstarch and 1 teaspoon of white vinegar then fold gently to combine all ingredients.
  6. Spoon the meringue mixture onto the prepared tray, shaping it into a circular base about 20 cm in diameter.
  7. Bake the meringue in the preheated oven for 1 hour; do not open the oven during this time.
  8. Turn off the oven after 1 hour and allow the pavlova to cool completely inside the oven.
  9. While cooling, whip 300 ml of heavy cream with 1 teaspoon of vanilla extract until soft peaks form.
  10. Spread the whipped cream over the cooled pavlova, then top with mixed berries for garnish.
  11. Slice and serve the Pavlova for a sweet dessert experience.
