How to make Halwa

  1. Measure 100 g of ghee and 150 g of semolina before starting.
  2. In a pot, melt the ghee over medium heat for 2-3 minutes until it's fully liquid.
  3. Add the semolina to the pot, stirring continuously for about 10-12 minutes until it turns golden brown.
  4. In a separate pot, measure and bring 500 ml of water to a boil over high heat.
  5. Dissolve 200 g of sugar into the boiling water, stirring until completely mixed in.
  6. Add 1 teaspoon of cardamom powder and a pinch of saffron to the sugar water, stirring for a few seconds.
  7. Carefully pour the sugar mixture into the semolina, stirring it continuously to avoid lumps forming.
  8. Cook the mixture for 6 to 8 minutes on medium-low heat until it thickens and pulls away from the sides.
  9. Fold in 100 g of chopped mixed nuts into the thickened mixture, mixing evenly.
  10. Pour the halwa into a greased dish, smoothing the top with a spatula.
  11. Let the halwa cool for at least 30 minutes before cutting.
  12. Cut into squares and serve the halwa warm or at room temperature.
