Ropa vieja recipe

Ingredients
- 800 g flank steak
- 1 unit onion
- 1 unit bell pepper
- 4 unit garlic
- 400 g canned tomatoes
- 2 tbsp olive oil
- 1 tsp cumin
- 2 unit bay leaves
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp coriander
- 300 g rice
How to make Ropa vieja
- In a large pot, heat 2 tablespoons of olive oil over medium heat until hot.
- Sear 1 kg of flank steak in the pot until browned on all sides, about 10 minutes.
- Add 1 chopped onion to the pot and sauté until soft, about 5 minutes.
- Stir in 1 chopped bell pepper and 4 minced garlic cloves; continue sautéing until fragrant, about 3 more minutes.
- Add 1 can (400 g) of diced tomatoes, 1 teaspoon of cumin, 2 bay leaves, salt, and black pepper.
- Stir everything to combine well and bring to a simmer.
- Cover the pot and simmer on low heat for 1.5 hours until the meat is tender.
- Use two forks to shred the meat in the pot and mix it back into the sauce.
- Serve the Ropa Vieja hot with rice on the side.
