How to make Pierogi

  1. Boil 1 kg of potatoes in salted water over high heat until tender, about 15-20 minutes. Drain and let cool.
  2. Mash the drained potatoes until smooth, then mix in 200 g of cheese, 1 teaspoon of salt, and 1 teaspoon of pepper.
  3. In a mixing bowl, combine 500 g of flour, 1 egg, and a pinch of salt. Stir until a dough starts to form.
  4. Knead the dough on a floured surface until smooth and elastic, about 5-7 minutes.
  5. Roll the dough out to about 2 mm thick, then cut out circles using a cup or cookie cutter.
  6. Place a spoonful of potato mixture in the center of each circle, then fold over and seal tightly.
  7. Bring a large pot of salted water to a boil over high heat, then gently add the pierogi to the boiling water.
  8. Cook the pierogi until they float, about 5-7 minutes, then remove with a slotted spoon.
  9. Chop 1 onion finely and sauté it in 50 g of butter over medium heat until golden brown, about 5 minutes.
  10. Serve the pierogi hot, topped with sautéed onions and a drizzle of extra butter, if desired.
