Żurek recipe
Savor the tangy warmth of traditional Polish żurek.
Ingredients
- 200 g sourdough starter
- 1000 ml water
- 400 g potatoes
- 250 g smoked sausage
- 1 unit onion
- 3 unit garlic
- 1 tsp marjoram
- 1 tsp black pepper
- 1 tsp salt
- 4 unit hard-boiled eggs
How to make Żurek
- In a large pot, combine 1 liter of water with 200 g of sourdough starter over medium heat and stir well.
- Add 300 g of diced potatoes and 1 chopped onion to the pot, mixing to combine.
- Mince 3 garlic cloves and add them to the pot, stirring everything together.
- Simmer the mixture uncovered for 30 minutes, until the potatoes are tender and the flavors develop.
- Stir in 200 g of sliced smoked sausage and 1 tablespoon of marjoram, mixing well.
- Season with 1 teaspoon of black pepper and 1 tablespoon of salt before cooking for another 15 minutes.
- Check for seasoning and adjust if necessary before serving the soup hot.
- Slice 4 hard-boiled eggs and place them on top of each serving before serving.
