Ingredients
- 300 g long-grain rice
- 400 g gandules (pigeon peas)
- 500 ml chicken broth
- 2 tbsp olive oil
- 1 unit onion
- 3 unit garlic
- 1 unit green bell pepper
- 1 tsp cumin
- 2 unit bay leaves
- 1 tsp salt
- 1 tsp black pepper
How to make Arroz con gandules
- Chop 1 onion, 3 garlic cloves, and 1 green bell pepper into small pieces before you begin cooking.
- Heat 2 tablespoons of olive oil in a large pot over medium heat until shimmering.
- Sauté the chopped onion for 3 minutes until translucent, then add the minced garlic and chopped bell pepper for another 2 minutes.
- Add 400 g of gandules, 300 g of long-grain rice, 1 teaspoon of cumin, 2 bay leaves, 1 teaspoon of salt, and 1/2 teaspoon of black pepper; stir well to combine.
- Pour in 700 ml of chicken broth and bring the mixture to a boil for about 3 minutes, watching for bubbling.
- Reduce heat to low, cover the pot, and simmer for 20-25 minutes until the rice is tender and the liquid is absorbed.
- Once done, remove the pot from heat and let it rest covered for 5 minutes to steam the rice.
- Fluff the rice gently with a fork before serving hot.
