Mofongo recipe

Ingredients
- 4 unit green plantains
- 4 unit garlic
- 200 g pork cracklings
- 60 ml olive oil
- 240 ml chicken broth
- 1 tsp salt
- 1 tsp black pepper
How to make Mofongo
- Peel and slice 4 green plantains into 1-inch pieces before beginning to cook.
- Heat 2 cups of olive oil in a deep pan over medium heat until shimmering, ready for frying.
- Fry the plantain pieces in hot oil for about 5-7 minutes until golden brown on all sides.
- Using a mortar, mash the fried plantains with 3 minced garlic cloves until combined but slightly chunky.
- Stir in 100 g of pork cracklings, 1 teaspoon of salt, and 1/2 teaspoon of black pepper with the plantain mixture.
- Gradually add 200 ml of chicken broth, mixing until the mixture is smooth yet chunky.
- Shape the mofongo into balls or spoon it into a bowl for serving, making it look appealing.
- Serve immediately with your choice of sauce or broth on the side.
