How to make Mofongo

  1. Peel and slice 4 green plantains into 1-inch pieces before beginning to cook.
  2. Heat 2 cups of olive oil in a deep pan over medium heat until shimmering, ready for frying.
  3. Fry the plantain pieces in hot oil for about 5-7 minutes until golden brown on all sides.
  4. Using a mortar, mash the fried plantains with 3 minced garlic cloves until combined but slightly chunky.
  5. Stir in 100 g of pork cracklings, 1 teaspoon of salt, and 1/2 teaspoon of black pepper with the plantain mixture.
  6. Gradually add 200 ml of chicken broth, mixing until the mixture is smooth yet chunky.
  7. Shape the mofongo into balls or spoon it into a bowl for serving, making it look appealing.
  8. Serve immediately with your choice of sauce or broth on the side.
