- 500 g potatoes
- 1 unit onion
- 2 unit garlic
- 4 unit eggs
- 100 g black olives
- 4 tbsp olive oil
- 10 g parsley
How to make Bacalhau à brás
- Soak 400 g of salted cod in cold water for 24 hours, changing the water twice during that time.
- Peel and julienne 300 g of potatoes, then heat oil in a frying pan over high heat.
- Fry the potatoes until they are golden and crispy, about 5-7 minutes, then remove and drain.
- In a separate pan over medium heat, add 3 tablespoons of olive oil.
- Sauté 1 chopped onion until it's soft and translucent, about 3 minutes, then add 2 minced garlic cloves.
- Continue to sauté for another minute until the garlic is fragrant, being careful not to burn it.
- Add the drained and shredded cod to the pan and cook for about 5 minutes until heated through.
- Fold in the fried potatoes and pour in 4 beaten eggs, stirring gently until the eggs are just set, about 3 minutes.
- Remove the pan from heat, then garnish the dish with black olives and finely chopped parsley.
