How to make Bacalhau à brás

  1. Soak 400 g of salted cod in cold water for 24 hours, changing the water twice during that time.
  2. Peel and julienne 300 g of potatoes, then heat oil in a frying pan over high heat.
  3. Fry the potatoes until they are golden and crispy, about 5-7 minutes, then remove and drain.
  4. In a separate pan over medium heat, add 3 tablespoons of olive oil.
  5. Sauté 1 chopped onion until it's soft and translucent, about 3 minutes, then add 2 minced garlic cloves.
  6. Continue to sauté for another minute until the garlic is fragrant, being careful not to burn it.
  7. Add the drained and shredded cod to the pan and cook for about 5 minutes until heated through.
  8. Fold in the fried potatoes and pour in 4 beaten eggs, stirring gently until the eggs are just set, about 3 minutes.
  9. Remove the pan from heat, then garnish the dish with black olives and finely chopped parsley.
  10. Serve immediately while warm.
