Ingredients
- 300 g rice
- 400 ml coconut milk
- 500 g chicken thighs
- 1 unit onion
- 3 unit garlic
- 1 tsp salt
- 1 tsp pepper
- 2 unit green onions
How to make Bai
- Rinse 400 g of rice under cold water until the water runs clear, about 2 minutes to remove excess starch.
- Chop 1 onion and mince 2 cloves of garlic, setting them aside for cooking.
- In a pot, heat 2 tablespoons of oil over medium heat, then sauté the chopped onion until translucent, about 3 minutes.
- Add the minced garlic to the pot and sauté until fragrant, about 1 minute.
- Add 500 g of chicken thighs to the pot and brown them on all sides, about 5-7 minutes.
- Stir in the rinsed rice, 400 ml of coconut milk, 1 teaspoon of salt, and 1/2 teaspoon of pepper; bring the mixture to a boil.
- Once boiling, reduce heat to low and cover the pot. Simmer for 20 minutes, until the rice is tender and liquid is absorbed.
- Once done, remove the pot from heat and let it rest, covered, for 5 minutes.
- Garnish the dish with chopped green onions before serving, distributing them evenly over the top.
