How to make Bai

  1. Rinse 400 g of rice under cold water until the water runs clear, about 2 minutes to remove excess starch.
  2. Chop 1 onion and mince 2 cloves of garlic, setting them aside for cooking.
  3. In a pot, heat 2 tablespoons of oil over medium heat, then sauté the chopped onion until translucent, about 3 minutes.
  4. Add the minced garlic to the pot and sauté until fragrant, about 1 minute.
  5. Add 500 g of chicken thighs to the pot and brown them on all sides, about 5-7 minutes.
  6. Stir in the rinsed rice, 400 ml of coconut milk, 1 teaspoon of salt, and 1/2 teaspoon of pepper; bring the mixture to a boil.
  7. Once boiling, reduce heat to low and cover the pot. Simmer for 20 minutes, until the rice is tender and liquid is absorbed.
  8. Once done, remove the pot from heat and let it rest, covered, for 5 minutes.
  9. Garnish the dish with chopped green onions before serving, distributing them evenly over the top.
