Tinola recipe
A comforting chicken soup with fresh greens.
Ingredients
- 800 g chicken
- 1200 ml water
- 30 g ginger
- 1 unit onion
- 4 unit garlic
- 300 g green papaya
- 150 g spinach
- 3 tbsp fish sauce
- 1 tsp black pepper
How to make Tinola
- Chop 1 onion and 2 cloves of garlic, setting them aside for cooking.
- Peel and dice a thumb-sized piece of ginger for flavor enhancement.
- In a pot, combine 1 kg of chicken with 1.5 liters of water, chopped onion, ginger, and minced garlic.
- Bring the mixture to a boil over high heat, then reduce heat and simmer for 25 minutes until the chicken is fully cooked.
- While the chicken cooks, peel and dice 250 g of green papaya and set it aside.
- After 25 minutes, add the diced green papaya, simmering for another 10 minutes until tender.
- Once the papaya is tender, stir in 100 g of spinach and 2 tablespoons of fish sauce.
- Season the soup with black pepper to taste before serving hot, ensuring flavors are well balanced.
