How to make Jareesh

  1. Soak 500 g of wheat in water for 2 hours, then drain the wheat well before cooking.
  2. Chop 1 onion finely and set it aside for cooking later.
  3. In a large pot, heat 2 tablespoons of ghee over medium heat until melted and hot.
  4. Sauté the chopped onion until it turns golden brown, about 5 minutes.
  5. Add 500 g of lamb pieces to the pot and brown them on all sides, approximately 10 minutes.
  6. Stir in the soaked wheat, followed by 1.5 liters of water to the pot.
  7. Season with 1 teaspoon each of salt, black pepper, and cinnamon, stirring well to combine.
  8. Bring the mixture to a boil, then reduce heat to low to let it simmer for 1.5 hours.
  9. Check occasionally for tenderness of the wheat and meat, stirring as necessary.
  10. Once cooked, let it rest off heat for a few minutes before serving.
  11. Serve warm in a bowl, optionally garnished with additional ghee.
