How to make Mutabbaq

  1. In a mixing bowl, combine 2 cups of all-purpose flour, ¾ cup of water, and ½ teaspoon of salt until a dough forms.
  2. Knead the dough on a floured surface for 5 minutes until smooth and elastic. Cover it and let it rest for 10 minutes.
  3. Chop 1 onion and 1 green pepper, setting them aside for the filling later.
  4. In a pan over medium heat, saute the chopped onion and green pepper until softened, about 3-4 minutes.
  5. Add 500 g of ground beef to the pan and cook, stirring, until browned, approximately 10 minutes, then let it cool.
  6. Divide the rested dough into 4 equal pieces and roll each piece thinly into circles, about 8 inches in diameter.
  7. Spoon some beef mixture into the center of each circle, folding the dough over to enclose the filling tightly.
  8. In a skillet, heat oil over medium heat until shimmering, ready for frying the pancakes.
  9. Fry each filled pancake for about 4-5 minutes on each side until they turn golden brown and crispy.
  10. Remove the cooked mutabbaq and place on paper towels to drain excess oil before serving.
  11. Serve warm, optionally with a dipping sauce on the side for extra flavor.
