Kokoda recipe
Fresh and zesty fish salad from the Pacific islands.
Ingredients
- 500 g fresh fish
- 100 ml lime juice
- 200 ml coconut cream
- 1 unit red onion
- 2 unit tomato
- 1 unit cucumber
- 1 unit chili pepper
- 1 tsp salt
- 1 tsp pepper
How to make Kokoda
- Dice 500 g of fresh fish into small cubes, about 1 cm each.
- Marinate the fish in ½ cup of lime juice for 15 minutes to firm it up.
- Chop 1 red onion finely and set aside.
- Chop 1 tomato and add it to the bowl with the fish.
- Chop 1 cucumber and 1 chili pepper finely, then combine them with the fish and tomatoes.
- Stir in 1 cup of coconut cream evenly into the mixture.
- Season with salt and pepper to taste, mixing thoroughly.
- Serve chilled in small bowls, garnished with extra lime if desired.
