How to make Groundnut soup

  1. Roast 200 g of groundnuts in a pan over medium heat, stirring occasionally until golden brown, about 8-10 minutes.
  2. Remove the groundnuts from the heat and let them cool briefly before blending into a smooth paste.
  3. In a pot, heat 2 tablespoons of vegetable oil over medium heat for about 2 minutes until hot.
  4. Sauté 1 chopped onion for 3 minutes until soft and translucent, then add 2 minced garlic cloves.
  5. Add 1 tablespoon of minced ginger and sauté for another 2 minutes until fragrant.
  6. Add 500 g of chicken pieces to the pot and brown on all sides for 7-10 minutes.
  7. Pour in 1 liter of water and bring to a boil, scraping the bottom of the pot.
  8. Stir in the groundnut paste, 1 teaspoon of salt, and 1/2 teaspoon of pepper.
  9. Reduce the heat to low and let the soup simmer for 20 minutes, stirring occasionally.
  10. Add 100 g of spinach to the pot and cook for an additional 5 minutes until wilted.
  11. Check seasoning and then serve hot with rice or bread for a hearty meal.
