Mafe recipe
A rich and hearty peanut stew from Senegal.
Ingredients
- 800 g chicken
- 1 unit onion
- 3 unit garlic
- 1 tbsp ginger
- 2 unit carrot
- 400 g sweet potato
- 200 g peanut butter
- 2 tbsp tomato paste
- 800 ml vegetable broth
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp cayenne pepper
- 2 tbsp oil
How to make Mafe
- Chop 1 onion, 2 garlic cloves, 1 tablespoon of ginger, 2 carrots, and 1 sweet potato before cooking.
- In a large pot, heat 2 tablespoons of oil over medium heat until shimmering.
- Add the chopped onion, minced garlic, and grated ginger, sautéing until soft and fragrant, about 5 minutes.
- Add 500 g of chicken pieces, browning them on all sides for approximately 5 minutes.
- Stir in the diced carrots and sweet potato, then add 2 tablespoons of tomato paste, mixing well.
- Pour in 1 liter of vegetable broth, bringing it to a boil. Reduce heat and let it simmer for 30 minutes.
- Stir in 200 g of peanut butter, seasoning with salt, black pepper, and cayenne to taste.
- Cook the mixture for an additional 10 minutes, stirring until well combined.
