How to make Pom

  1. Preheat your oven to 180°C (350°F) for 10 minutes before starting the dish.
  2. Prepare all ingredients: chop 1 onion, 2 garlic cloves, 2 carrots, and 1 bell pepper; gather 4 chicken thighs and 400 g of yellow potatoes.
  3. Heat oil in a pan over medium heat for 1 minute; add the chopped onion and sauté for 3-5 minutes until soft and translucent.
  4. Add 2 minced garlic cloves to the pan and cook for another minute until fragrant.
  5. Place 4 chicken thighs in the pan and brown them on all sides for 8-10 minutes until golden.
  6. Stir in 400 g of diced yellow potatoes, 2 chopped carrots, and 1 chopped bell pepper; mix everything well for 2 minutes.
  7. Add 2 tablespoons of tomato paste to the mixture and stir well to combine everything together.
  8. Pour in 500 ml of chicken broth; add 2 bay leaves, 1 teaspoon of salt, and 1 teaspoon of black pepper; stir.
  9. Transfer the mixture to a baking dish and spread it evenly; cover with foil and bake for 60 minutes.
  10. Remove the dish from the oven and check that the chicken is cooked through and tender before serving.
