Molokhia recipe
A flavorful and nutritious green stew from South Sudan.
Ingredients
- 200 g molokhia leaves
- 500 g chicken
- 1 unit onion
- 4 unit garlic
- 2 tbsp vegetable oil
- 1 tsp salt
- 1 tsp black pepper
- 1 unit water
How to make Molokhia
- In a large pot over medium heat, add 2 tablespoons of vegetable oil.
- Once hot, sauté 1 chopped onion until it becomes translucent, about 5-7 minutes.
- Add 3 minced garlic cloves and stir for 1 minute until fragrant.
- Next, add 500 g of diced chicken to the pot and cook for 8-10 minutes until it's browned on all sides.
- Pour in 1 liter of water and season the mixture with 1 teaspoon of salt and 1 teaspoon of black pepper.
- Bring the mixture to a full boil, stirring occasionally to combine the ingredients.
- Once boiling, add 300 g of molokhia leaves to the pot and reduce the heat to low.
- Simmer the stew for 20 minutes until the leaves are tender and the broth thickens slightly.
- After cooking, taste and adjust seasoning as needed before serving.
- Serve the hot molokhia immediately with rice or bread.
