How to make Kibbeh

  1. In a large pot, melt 3 tablespoons of butter over medium heat.
  2. Sear 500 g of beef sirloin in the melted butter until browned on all sides, about 5-7 minutes.
  3. Chop 1 onion and add it to the pot, along with 2 chopped carrots and 300 g of peeled and diced celery root.
  4. Sauté the mixture until the vegetables soften, about 7-10 minutes.
  5. Sprinkle 3 tablespoons of flour over the vegetable mixture and stir continuously for 2 minutes.
  6. Pour in 1.5 liters of vegetable broth and add 2 bay leaves, 1 teaspoon of salt, and 1 teaspoon of black pepper.
  7. Simmer uncovered for 90 minutes, stirring occasionally to prevent sticking.
  8. Remove the beef from the pot and set aside to cool slightly for slicing.
  9. In a blender, combine the sauce with 200 ml of heavy cream and the juice of 1 lemon.
  10. Blend the mixture until smooth and creamy, adjusting seasoning if necessary.
  11. Slice the beef sirloin and serve it with the creamy sauce poured generously over the top.
