How to make Ojja

  1. Heat 3 tbsp of olive oil in a large skillet over medium heat until hot and shimmering.
  2. Add 1 chopped onion and 1 diced bell pepper to the skillet. Sauté for 5-7 minutes until softened and fragrant.
  3. Stir in 200 g of diced tomatoes and 150 g of chorizo sausage. Cook until heated through, around 3-4 minutes.
  4. Season the mixture with 1 tsp of cumin, 1 tsp of paprika, 1/2 tsp of salt, and 1/4 tsp of black pepper. Stir well to combine the spices.
  5. Create 4 wells in the mixture for the eggs. Crack one egg into each well carefully.
  6. Cover the skillet with a lid and cook for 5-7 minutes, or until the egg whites are set and yolks are still runny.
  7. Remove from heat and let rest for a minute before serving hot. You can garnish with extra herbs if desired.
