How to make Doubles

  1. Soak 200 g of chickpeas overnight in water. Drain and cook them until tender, about 1 hour.
  2. Once cooked, drain the chickpeas and mash them in a bowl. Mix in 1 chopped onion, 1 diced green pepper, and 1 finely chopped scotch bonnet.
  3. To the mashed chickpeas, add 1 teaspoon of cumin, 1 teaspoon of coriander, and 1/2 teaspoon of salt. Mix until well combined.
  4. In a separate bowl, combine 250 g of flour, 1 teaspoon of baking powder, and a pinch of salt.
  5. Gradually add water to the flour mixture, working it until a smooth dough forms.
  6. Divide the dough into 8 small balls and roll each into flat discs about 10 cm in diameter.
  7. Heat a skillet over medium heat and cook each disc for 2-3 minutes on each side until golden brown.
  8. Fill each flatbread with the chickpea mixture and drizzle with 100 ml of coconut milk before serving.
