Faiakau recipe

Ingredients
- 400 ml coconut milk
- 300 g rice
- 400 g fish fillets
- 1 unit onion
- 2 unit garlic
- 2 unit lime
- 1 tsp salt
- 1 tsp pepper
How to make Faiakau
- Rinse 1 cup of rice under cold water until the water runs clear.
- Cook the rice according to the package instructions for about 20 minutes until fluffy and set aside.
- In a pan over medium heat, pour in 400 ml of coconut milk and heat until it begins to gently simmer.
- Chop 1 onion and mince 2 cloves of garlic; add them to the simmering coconut milk.
- Sauté the onion and garlic in the coconut milk for 5 minutes until soft and fragrant.
- Add 4 fish fillets to the pan carefully, cooking them for about 6-8 minutes.
- Flip the fish halfway through the cooking process until they become flaky.
- Stir in the juice of 1 lime, along with 1 tsp salt and 1/2 tsp pepper; mix well to combine flavors.
- Plate the cooked rice and serve the fish on top, drizzling the coconut sauce over the dish.
