How to make Luwombo

  1. Chop 1 onion and set aside. Cut 500 g of chicken into pieces and slice 2 plantains.
  2. In a large pot, heat 2 tablespoons of vegetable oil over medium heat. Add the chopped onion and sauté until golden, about 5 minutes.
  3. Add the chicken pieces to the pot, cooking for about 8-10 minutes until browned on all sides.
  4. Stir in 2 chopped tomatoes and cook for 5 minutes until they soften.
  5. Mix in 250 g of peanut butter and 500 ml of water; stir well and bring the mixture to a simmer.
  6. Add the sliced plantains and 1 teaspoon of salt, then cover the pot.
  7. Cook for 30 minutes, stirring occasionally, until plantains are tender.
  8. Remove from heat and let the Luwombo rest for a few minutes before serving. Serve hot with rice or matoke.
