Luwombo recipe
Savor the rich flavors of this traditional Ugandan stew!
Ingredients
- 800 g chicken
- 100 g peanut butter
- 1 unit onion
- 2 unit tomato
- 2 unit plantain
- 500 ml water
- 1 tsp salt
- 2 tbsp vegetable oil
How to make Luwombo
- Chop 1 onion and set aside. Cut 500 g of chicken into pieces and slice 2 plantains.
- In a large pot, heat 2 tablespoons of vegetable oil over medium heat. Add the chopped onion and sauté until golden, about 5 minutes.
- Add the chicken pieces to the pot, cooking for about 8-10 minutes until browned on all sides.
- Stir in 2 chopped tomatoes and cook for 5 minutes until they soften.
- Mix in 250 g of peanut butter and 500 ml of water; stir well and bring the mixture to a simmer.
- Add the sliced plantains and 1 teaspoon of salt, then cover the pot.
- Cook for 30 minutes, stirring occasionally, until plantains are tender.
- Remove from heat and let the Luwombo rest for a few minutes before serving. Serve hot with rice or matoke.
