How to make Osh

  1. Before starting, chop 1 onion and 2 carrots, measuring 500 grams of lamb and 750 milliliters of water.
  2. In a large pot, heat 3 tablespoons of vegetable oil over medium heat for 1-2 minutes until hot.
  3. Add the chopped onion and sauté until golden brown, about 5-7 minutes, stirring occasionally.
  4. Stir in 500 grams of diced lamb and cook until browned on all sides, around 8-10 minutes, stirring frequently.
  5. Add the sliced carrots and continue to sauté for an additional 5 minutes, stirring occasionally.
  6. Mix in 4 minced garlic cloves, 1 teaspoon of cumin, 1 teaspoon of salt, and 1/2 teaspoon of black pepper; stir well to combine.
  7. Pour in 750 milliliters of water and bring to a boil over high heat, stirring occasionally.
  8. Add 300 grams of long-grain rice to the boiling mixture and stir gently to combine.
  9. Cover the pot, reduce the heat to low, and simmer for 20-25 minutes until the rice is tender and the water is absorbed.
  10. Turn off the heat and let it rest for 5 minutes before serving.
