Mandi recipe
Savor the aromatic flavors of traditional Yemeni Mandi.
Ingredients
- 1200 g chicken
- 400 g basmati rice
- 2 unit onion
- 2 unit tomato
- 4 unit garlic
- 3 tbsp yemeni spice mix
- 1000 ml water
- 1 tsp salt
- 3 tbsp olive oil
- 1 pinch saffron
How to make Mandi
- Prepare 50 ml of olive oil and heat it in a large pot over medium heat until shimmering.
- Chop 150 g of onion and sauté it in the olive oil until golden brown, stirring occasionally for about 10 minutes.
- Mince 3 garlic cloves and add them to the pot along with 200 g of diced tomatoes and 20 g of Yemeni spice mix; cook for 5 minutes until fragrant.
- Add a whole chicken (about 1.5 kg) to the pot and brown it on all sides for about 10 minutes for added flavor.
- Pour in 1 liter of water and season with 10 g of salt, then reduce the heat to low and simmer for 30 minutes.
- Carefully remove the chicken from the pot and set it aside on a plate to rest.
- Add 500 g of basmati rice to the pot and stir it well into the broth.
- Place the chicken back on top of the rice, cover the pot, and cook for another 20 minutes until the rice is tender and fluffy.
- Remove from heat, fluff the rice with a fork, and serve hot, garnished with a pinch of saffron for added flavor.
