How to make Mandi

  1. Prepare 50 ml of olive oil and heat it in a large pot over medium heat until shimmering.
  2. Chop 150 g of onion and sauté it in the olive oil until golden brown, stirring occasionally for about 10 minutes.
  3. Mince 3 garlic cloves and add them to the pot along with 200 g of diced tomatoes and 20 g of Yemeni spice mix; cook for 5 minutes until fragrant.
  4. Add a whole chicken (about 1.5 kg) to the pot and brown it on all sides for about 10 minutes for added flavor.
  5. Pour in 1 liter of water and season with 10 g of salt, then reduce the heat to low and simmer for 30 minutes.
  6. Carefully remove the chicken from the pot and set it aside on a plate to rest.
  7. Add 500 g of basmati rice to the pot and stir it well into the broth.
  8. Place the chicken back on top of the rice, cover the pot, and cook for another 20 minutes until the rice is tender and fluffy.
  9. Remove from heat, fluff the rice with a fork, and serve hot, garnished with a pinch of saffron for added flavor.
